Avocado Chocolate Mousse
4 oz semi sweet chocolate chips
2 large ripe avocados
4 tbsp unsweetened coca powder
1/4 unsweetened almond mile
1 teaspoon pure vanilla
1/8 tsp sea salt
2 tsp light agave nectar
Optional top with fresh raspberries or strawberries , whipped cream or chocolate shavings
Melt chocolate chips in microwave in 15 second increments stirring between to make sure the chocolate doesn’t burn. When almost all melted stir until smooth and set aside
Halve and pit the avocados and scoop into an food processor with a steel blade or in a high powered blender. Add melted chocolate, cocoa powder, almond mile, vanilla, salt and agave nectar. Blend until smooth and creamy. Spoon into glasses and place in the refrigerator for 2 hours or overnight.
Top with desired fruit, whipped cream or chocolate savings.
