Roaster Vegetables

1 Red Onion – chopped
1 green pepper – chopped
1 yellow pepper – chopped
1 bag of broccoli florets
6 carrots – pealed and chopped
2 zucchini – chopped
1 yellow squash – chopped
1/4 cup olive oil
1 tbsp of your favorite all spice (my fav is Trader Joe’s 21 Season Salute)
minced garlic
salt & pepper
Combine all ingredients in a large bowl and coat veggies well with oil and seasonings
Transfer to a baking sheet
Roast at 425 for 23-35 minutes
