Left Overs Greek Bowl

Ingredients
Spring mix
Grilled chicken cutlet
2 garlic gloves
Brown rice (microwaveable pounce)
Cucumbers
Spinach
Red onion
Calimata olives
Feta cheese
Directions
Chop chicken cutlet and sauté in a pan with olive oil and 1 minced garlic clove. Just sauté until heated through and set aside
Microwave the rice pouch
Sauté spinach and red onion in olive oil and the other garlic clove minced.
Sliced cucumber
Layer all items in a bowl, spring mix, rice, chicken, spinach and red onion, cucumbers, olives and top with Feta cheese and your favorite Greek dressing.
