Ingredients
1 medium sweet potato, diced small
4 large eggs
4 slices turkey bacon (or center-cut bacon for lower fat)
1 cup egg whites (boosts protein without many calories)
1 cup spinach (fresh)
¼ cup onion, diced
1 clove garlic, minced
1 teaspoon olive oil (or avocado oil)
Salt & pepper to taste
Optional: paprika or chili flakes for flavor
Directions
Cook the sweet potatoes
Heat olive oil in a large skillet over medium heat.
Add diced sweet potatoes and cook for 8–10 minutes, stirring occasionally, until softened and slightly crispy.
Cook the bacon
Push potatoes to one side and add chopped turkey bacon.
Cook until browned and slightly crispy.
Add veggies
Stir in onion, garlic, and spinach. Cook 2–3 minutes until fragrant and wilted.
Add eggs
In a bowl, whisk eggs + egg whites with salt and pepper.
Pour into skillet and gently scramble everything together.
Finish
Cook until eggs are just set. Sprinkle with paprika or chili flakes if desired.
