4 large eggs
8 egg whites
2 cups frozen broccoli thawed
½ cup grated parmesan
1 cup low fat cottage cheese
Avocado oil spray
Directions
Place all ingredients except broccoli in a blender and blend until smooth
Prepare a muffin pan by spraying with avocado oil spray
Divided the broccoli into each cup of the muffin pan
Pour egg mixture into each filling almost to the top
Sprinkle with salt & pepper
Bake 325 20-22 mins
