Egg & Avocado Toast

2 whole eggs + 2 egg whites scrambled 

2 slices Ezekiel bread 

1/2 avocado

OPTIONAL: Add turkey bacon or smoked salmon for extra protein

Directions

Toast the Bread: Place 2 slices of Ezekiel bread in the toaster. Aim for a golden-brown crunch to support the weight of the toppings.

Prep the Avocado: In a small bowl, mash ½ an avocado with a squeeze of lemon or lime juice and a pinch of salt/pepper. This prevents browning and adds a bright flavor.

Scramble the Eggs:

Whisk 2 whole eggs and 2 egg whites in a bowl.

Heat a non-stick skillet over medium-low heat with a light spray of oil.

Pour in the eggs and cook low and slow, stirring gently, until they form soft, creamy curds.

Assemble: Spread the mashed avocado evenly across both slices of toast. Top with the scrambled eggs.

Garnish: Sprinkle with red pepper flakes, “Everything Bagel” seasoning, or a dash of hot sauce.
