2 whole eggs + 2 large egg whites
2 turkey sausage links
Veggies: 1/2 cup diced bell peppers, 1/4 cup diced onion, 1 cup baby spinach
Optional: 1–2 tablespoons shredded cheese (cheddar or feta)
1 tsp olive oil or butter, salt and pepper to taste
Directions
Prepare Ingredients: Whisk the 2 eggs and 2 egg whites together in a bowl, seasoning with salt and pepper. Slice the turkey sausage links into rounds.
Cook Sausage & Veggies: Heat a non-stick skillet over medium heat with oil. Add sliced turkey sausage and cook for 2–3 minutes until lightly browned. Add diced onion and bell peppers; sauté until softened (3–4 minutes).
Wilt Spinach: Add the spinach to the skillet, stirring until it begins to wilt, about 1 minute.
Scramble: Pour the egg mixture over the sausage and vegetable mixture. Let it set slightly for 30 seconds, then gently stir until the eggs are cooked through and fluffy.
Finish: Top with a sprinkle of cheese (if using) and stir until melted. Serve immediately.
