Tuna Salad Stuffed Avocados

Ingredients

1 can tuna (in water, drained)

2 hard-boiled eggs (chopped)

1 tbsp mustard

2 tbsp celery (finely chopped)

1–2 tsp olive oil

1 ripe avocado (halved & pitted)

1–2 cups mixed greens (spinach, arugula, romaine)

Salt & pepper to taste

Optional: squeeze of lemon, paprika, or fresh herbs

Directions

Prepare the tuna mixture:
In a bowl, combine drained tuna, chopped hard-boiled eggs, celery, mustard, and olive oil.

Mix well:
Stir until everything is evenly coated and creamy. Season with salt, pepper, and any optional spices or lemon juice.

Prepare the avocado:
Slice the avocado in half and remove the pit. Scoop out a small amount if needed to create space for filling.

Assemble:
Place mixed greens on a plate as a base. Spoon the tuna mixture into each avocado half.

Serve:
Place the stuffed avocado halves on top of the greens and enjoy immediately.
